I came across this thread randomly by accident by searching for a red pepper famous white sauce recipe haha. Thanks for everyone’s input. I am looking to recreate my favorite college fast food sandwich! Anyone know how to make the red sauce and also what seasonings are in the taco meat? Thanks in advance. GO SIOUX!

There you go I gave my secrets

I have been trying to replicate the Pepper's mexi-burgers (not the taco burger). My kids have a lot of fun with this because I'm not getting very close to the Pepper's distinct flavor. Any former employees or Pepper aficionados have any suggestions?

Love them mexi-burgers. Anybody know the fixin’s?

RP hack.......off menu item

Schneider Tacos.......enchilada sauce and white sauce added.

<chef's kiss>

Since they ruined the bread, those are all I order.

From my recollection, the recipe is as follows...you have to do the proportions via testing to get the proper mix as the recipe involve large qtys...

- Need to find the most generic govt brand salad dressing...its not mayo or miracle whip, but rather generic salad dressing

- Ground black pepper (strong stuff, not weak crap)

- Milk to make it flow (I would think 2% would work)

- Touch of salt for taste

Again, don't go crazy on the salt, but be liberal with the pepper,,,Also, its not swiss cheese its white American

The buns can be found at Hugos on the east side and the hot sauce is hot and thin, no chunks...

shredded lettuce at Hugos as well and the white american is sold in slices in the cheese aisle...

Good Luck....

I wonder how half and half would work?

Thank you.

Make sure to use instant oats - they're "mushier" and blend into the meat better. Cook them before adding to the meat.

Never thought if oats.  Interesting…

I thought of that, but even day old bread breaks the romance of the experience.

They changed the bread a few years ago anyway. It was not a good change. Order the kit and find a suitable loaf of bread locally.

Down here in Tucson a good sweet bread might be a good substitute.  Maybe even a jalapeno sweetbread.
