Maybe this doesn't count because he started his career late, but always wondered how good Chad Mustard would have been if he played 4 years.  Pretty impressive to get a shot in the NFL and only playing 1 year of college.

 

Looks like i was late in suggesting this.  Didn't submit quit enough.

Yeah. Made zero effort to attend class or do anything, even with the athletic department pushing him every day.

Pete Stewart. Played basketball at UND. Was a 6-6 quarterback in High School. Great athlete. I think he had talked about sticking around for another semester and playing football but then I think he got some offers to play pro ball overseas.

Rick Helling, although he did have a MLB baseball career after Stanford. I doubt he regrets his football career that could've been at UND.
