I just know that I start at 3pm and go until we are done for the night. or one night this summer until i cut my fingers. Stupid trays! Kind of like the parking office at the airport they go home after the last flight. If weater postpones that last flight they are there longer. If weater postpones that last flight they are there longer. kind of, I make salads in the summer so it depends on what all has to go out the next day to the stores and who has called and ordered more that day, if there are any sales going on anywhere so they need more or whatever the stores need. on average, we make about 7 different kinds of salads a night but we batched up about 35 batches of potato salad last night and there is about 40 pounds in one batch.
